This extraordinary Cabernet Sauvignon comes from Rockpile AVA which is located in the northwest corner of Sonoma County. This unique climate offers elevations reaching 2,000 feet above sea level and is heavily influenced by the presence of Lake Sonoma. The soils are comprised of sandstone and shale, the soils are rocky as the AVA suggests.

This is a full bodied wine with an abundance of character and structure. Red Plum, vanilla spice and leather envelop your senses. Dryer in style with a elegant finish.

The grapes were harvested starting in early October. The 2018 vintage offered excellent growing conditions. A mild winter followed by an early spring started the year off early. Sonoma County did not suffer any heat waves (or fires) this summer so the ripening was slow and steady. We picked much later this year as mild days continued into September. This vintage will be characterized by good acidities and lower alcohols. Paradise Ridge has been working with the same vineyard blocks since 2006 we have created a cooperative relationship that enables us to work closely with the vineyard team through out the vines growth cycle. Four of the Bordeaux varietals are blended to make this wine. 87% Cabernet Sauvignon, 7% Malbec, 4% Petite Verdot and 2% Cabernet Franc. The Elevation Bordeaux Blend was created over several months from over 9 different wine lots.

We ferment the fruit in a open top tank. Cold soaked for several days followed by warm fermentation utilizing submerged cap, punch downs and pump overs
