All the fruit was sourced from cooler AVA's of Sonoma County. Cool, breezy days with lots of sunlight and cold, foggy nights make these areas ideal for growing sparkling base wines.

Tasting Notes
Our newest addition to our portfolio is a dryer style of sparkling wine. Rose gold in the glass. The nose is full of fresh berry fruit, rich custard and a touch of candied orange peel. The mousse is light and airy with a well textured and refreshing mouthfeel. The finish leans more to a raspberry sorbet, ginger cookie and pie crust.

In March of 2021 the wine was blended and bottled with yeast, sugar and crown capped for aging. This is what creates the tiny beading that occurs in the traditional method of sparkling wine.

73% Pinot Noir, 24% Chardonnay, 2% Pinot Meunier, 1% Pinot Gris
Whole cluster, pressed to tank and cold settled overnight, then racked off heavy solids to stainless steel tanks. The juice was fermented cold to promote a crisp, aromatic style to dryness.
